The quiche was a roaring success! It got gobbled up in a hurry.
Breana Patterson claimed, "This is the best quiche I've ever had!"
Dan Dean, organizer of the Veggie Potlucks, raved, "It was my favorite dish of the night."

I am thoroughly impressed with that little recipe. I really did enjoy it, too. Next time I'll probably throw in some more veggies. Maybe I'll try out this undertaking for my birthday. I'm also considering this gluten-free wonder for the cake.

My 19th is this Thursday, same day as my stat exam. Oh. Boy. I really want to have a rollerskating/friendship bracelet making party. That's also as much work as I want to put into organizing it. Maybe it'll be a surprise party, as in the surprise will be I won't tell anyone about it and I'll show up and no one else will be there and I'll yell "Surprise!"

Sounds appropriate.

What a strange weekend. It feels like it's been so long, already. I'm disappointed I didn't get to judge more at March madness, but I really enjoyed sleeping in today.

This week is going to be stressful and exciting. I hope my seeds sprout by my birthday. They're way behind Breana's and Hugh's. It's making me molto geloso.

That's my itsy bitsy update in lieu of actually getting homework done. I'm amazed at my non-productive abilities.

quiche!

Quiche is one of those words that always deserves an exclamation point, much like the former Panic! at the Disco (except less annoying). Apparently, !s are not allowed in post tags, but you get the idea.

Tomorrow is the 2 year anniversary of the vegetarian potlucks at the OMNI Center. Coincidentally, February 26th-ish was the 2 year anniversary of my own vegetarianism. So, I figured this occasion called for something special.

On Saturday, I bought beautiful eggs from Kim Kapity of Sycamore Valley Farm, one of the loveliest places in this area. Kim's hens are pasture-raised, meaning they run around all over her yard and that means they get to do chicken-things. They are happy and healthy, and the yard is clean and doesn't smell anything like chicken houses! It just smells like the outdoors. Kim's chicken eggs go for $3.50 a dozen, and she made sure I got a carton with green ones. Did you know eggs come in green, outside of Dr. Suess? They do and they're awesome.



Anyway, I didn't buy eggs with any specific intentions, but then I remembered the veggie potluck and (as my Popie would say) viola: quiche!

So today I came to my parents house to get cookin'. I first turned to the weathered Betty Crocker cookbook I've grown up with, but I was alarmed at how much butter went into the crust of that quiche. I've also been steering clear of gluten lately, so I turned to my friend Google. After clicking around for a while and getting pretty dissatisfied, I ended up with this recipe from allrecipes.com. It's simple, doesn't use a crust, only takes 30 minutes to bake, and has a 4 1/2 out of 5 star rating! Can't get better than that.

I'm not much of a food blogger, but this is definitely worth sharing.

Ingredients
1 tablespoon vegetable oil (I used olive)
1 onion, chopped
1 (10 ounce) package frozen chopped spinach, thawed and drained (I didn't have spinach, so I used a mix of salad greens)
5 eggs, beaten
3 cups shredded Muenster cheese (I used mozzerella)
1/4 teaspoon salt
1/8 teaspoon ground black pepper
And I added some flax seed because it's healthy and gives it some texture without gluten.

First, I chopped the onion and sauteed it in olive oil, and then added the greens, until the onions browned a bit and it all looked cooked.



Then I beat the eggs, added cheese, salt and pepper to it, and then mixed in the onions and greens.



Then I just poured the whole thing into a sprayed 9-inch glass pan, and put it in the oven! Simple as that. Just 30 minutes at 350. I'm amazed!

I'll let you know how it tastes tomorrow night, but I have high hopes.
